Rodelle Vanilla

Peach BBQ Sauce
This sauce is great when used as a BBQ sauce with grilled chicken or pork.

Preparation - 30 min | Cooking time – 2 hours| Yields – 5-6 cups

Ingredients:
5 cups ripe peaches, peeled, pitted and chopped
2 ½ cups champagne or white wine vinegar 1 tsp salt
1 lb brown sugar 1 Rodelle Vanilla Bean
2 - 2 inch strips of orange zest 1 tsp Mustard seed
1 cinnamon stick 1 ½ in slice peeled ginger root
1 nutmeg, cracked (carefully with a small hammer) 1 tsp whole cloves
1 tsp juniper berries

Method:
Combined the chopped peaches, champagne, salt and brown sugar in a large pot.
Tie the remaining ingredients in several layers of cheesecloth and add to the pot.
Over high heat, bring the ingredients to a boil.
Reducing the heat to medium, cover and simmer until the peaches are extremely soft, about 30 minutes.
Using a slotted spoon, transfer the peaches to a food processor and puree them.
Return the pureed peaches to the pot with the cooking liquid and spice bundle.
Simmer mixture until very thick, about 1 hour.
Remove spice bundle and the froth from the top of mixture.
Ladle the BBQ sauce into five or six sterilized, still hot half pint jars.
Wipe rims and seal immediately with hot lids, plus rings.
Process in boiling water bath for 15 minutes.
