Rolled Sugar Cookies


Preparation - 25 min | Baking – 8-12 min
Difficulty - Easy | Yields – 2 dozen cut outs

Ingredients

3 ¼ cups flour
1 ½ tsp baking powder
½ tsp salt
10 oz unsalted butter
1 cup sugar
1 egg
2 ½ tsp RODELLE Vanilla Extract
1 tbsp milk

Method
  • Preheat the oven to 350 degrees.
  • In a mixing bowl, sift together the flour, baking soda and salt.
  • In a separate mixing bowl, cream butter and sugar and light and fluffy.
  • Add the egg and mix until incorporated.
  • Add the RODELLE Vanilla Extract and milk.
  • Carefully begin to add the dry ingredients.
  • Mix until a ball forms.
  • Remove from mixer and roll into a rectangle about ¼ inch thick. (If the dough is too soft to work with, refrigerate until firm to the touch and start over).
  • Cut out shapes and place on a cookie sheet.
  • Bake at 350 degrees for 8-12 minutes or until the edges are light golden in color and centers are soft.
  • Remove and allow to cool on a wire rack.
  • Once completely cool, decorate with royal icing or frosting.

Royal Icing
2 egg whites
4 cups powdered sugar, sifted
Juice of 1 lemon
    • Beat egg whites until stiff.
    • Slowly add the sifted powdered sugar.
    • Add lemon juice.
    • Mix until you achieve the right spreadable consistency. If it is too thick, add a little more lemon juice; too thin, add more powdered sugar.
    • Add food coloring to make various designs.
    • Sprinkle Rodelle Vanilla Sugar on top of icing.
