Rolled Sugar Cookies

Ingredients
3 ¼ cups flour
1 ½ tsp baking powder
½ tsp salt
10 oz unsalted butter
1 cup sugar
1 egg
2 ½ tsp
RODELLE Vanilla Extract
1 tbsp milk
Method
- Preheat the oven to 350 degrees.
- In a mixing bowl, sift together the flour, baking soda and salt.
- In a separate mixing bowl, cream butter and sugar and light and fluffy.
- Add the egg and mix until incorporated.
- Add the RODELLE Vanilla Extract and milk.
- Carefully begin to add the dry ingredients.
- Mix until a ball forms.
- Remove
from mixer and roll into a rectangle about ¼ inch thick. (If the dough
is too soft to work with, refrigerate until firm to the touch and start
over).
- Cut out shapes and place on a cookie sheet.
- Bake at 350 degrees for 8-12 minutes or until the edges are light golden in color and centers are soft.
- Remove and allow to cool on a wire rack.
- Once completely cool, decorate with royal icing or frosting.
Royal Icing
2 egg whites
4 cups powdered sugar, sifted
Juice of 1 lemon
- Beat egg whites until stiff.
- Slowly add the sifted powdered sugar.
- Add lemon juice.
- Mix
until you achieve the right spreadable consistency. If it is too thick,
add a little more lemon juice; too thin, add more powdered sugar.
- Add food coloring to make various designs.
- Sprinkle Rodelle Vanilla Sugar on top of icing.
